Snacking

I made these cookies the other day.  They turned out pretty well, though not as chewy as I would have liked.  I’m still on the look out for the perfect recipe.  There are a couple of others out there that I have found that I am going to try out next time.

I’m on the look out for good recipes for healthy(-ish) snacks and lunches to keep around.  Things that can either be made in advance and will keep for a few days, or that are easy to make on the spot.  Ideally, I could make them up on Sunday, and they’d last for the week.  Right now, it will mostly be me eating them, but as Meredith starts eating more and more I’d like her to be able to help herself and not have to worry too much about what she’s eating.  I have lots of breakfast options: pancakes, muffins, yogurt, oatmeal, eggs…

I have some ideas for lunches and snacks.  I’m going to make those granola bars I made a couple of weeks ago again and not eat them all in one day.  Tortilla chips and hummous or sour cream are quick and easy and Meredith likes them.  I’d like to start keeping veggies/fruit and dip around.  Celery and peanut butter are a big hit with kids I know, though I’m not sure Meredith would do much more than lick the peanut butter off at this point.  I could get some raisins too.  I’m not a huge fan of raisins but I used to like them with celery and peanut butter.  I love yam fries, and usually make my own.  I bought a package of precut yam from Costco and froze them, then when I wanted them I could take them out and add oil and spices and throw them in the oven.   I’m going to try doing the same thing with yams I’ve bought.  I have them with a curry mayo dip, yum.  Deviled eggs are good, though I’m not sure how long they last.  Meredith loves cheese too, so I’d probably offer a few slices of cheese as well, though I am trying to avoid a lot of dairy.

I’d like to have a variety of things on hand for me and to offer Meredith when she’s hungry.  I’m keeping an eye out on Freecycle for a mini bar fridge, which we could keep snacks in for her that she could go to any time she wanted.  Some of the foods might not be as healthy as others, but I can stock up each day or week with what I’m comfortable with her having, and if she eats one thing all at once she will still have lots of other options on hand for later.  It will give her some control and choice over what she eats and when, while still ensuring that she has a variety of healthy options available.  It would also be good for me, since so often I forget to eat, or just don’t feel like I have time.

  • Mmmm cookies!

    Deviled eggs last at least a few days. I used to make a batch up on Sunday and take them for lunch that week. They were good usually four days or so. You can also just hard boil a bunch of eggs (run them under cold water after so they don’t get that blue ring), peel them and stick them in the fridge. Then make deviled eggs with them whenever you feel like having one.

    PS – I LOVE yam fries (hint hint)
